Martin
Abdul, known to his friends as Martin, left school at 16 and started his first job as a kitchen porter
in a restaurant in Nottingham called Mogul-e-Azam (lots of famous people have dined there). By the time
he left, he had gained substantial experience in the workings of an Indian Restaurant and had reached
the position of 2nd chef.
Then, Martin moved to Loughborough and started work in a restaurant called Eastern Garden (which had been open since 1970s).
Here he was fully trained as front of house staff before eventually becoming Head Waiter.
Next, he moved to Mansfield and for 6 years managed a 80 seater restaurant but in 2000 had to move back to his home town, so
started to work at Tandoori Nights in Shardlow, further extending his knowledge of Indian Restaurants and how to improve them.
Finally in June 2006, Martin and Mo joined forces to open their exclusive Indian Restaurant – Mahmaan in Oakwood.
Mo
Mobu, known to his friends as Mo, has many years experience in both the catering and banking sectors. He grew up in Eastleigh (near Southampton)
and worked and managed various restaurant in Southampton, until moving to the midlands in 2000.
He relished the chance to open his first restaurant (Chutneys in Loughborough), When the opportunity came along.
His prior experiences in restaurant management enabled Chutneys to grow successfully and was eventually sold after 4 years.
Since then Mo has had an extremely busy time both in the banking sector, working for Hsbc, whilst also running Mahmaan since June 2006 (in partnership with Martin).
Faruk
Faruk joined Mahmaan as head chef when it first opened in 2006 and has been leading the team ever since.
He qualified as a chef in 1990 and has previously worked in many of the top restaurants in the East Midlands.
Faruk is originally from Chittagong (on the banks of the Karnaphuli River, home to Bangladesh’s busiest seaport).
The Monkfish and Tawa recipes are particular specialites and inspired by this area of Bangladesh.
